Then try chilling for just about 30-45 minutes and then cooking the cookies. If macadamia nuts weren’t so darned expensive, I’d eat them like popcorn and put them in everything. After 8-10 mins mine are still balls. I haven’t tried replacing the sugar in these so I’m not sure. Because for how many healthy swaps they have, they really are the best! I put the dough in the refrigerator and left it there for 70 minutes. Yum . It takes seconds to make the oat flour and the only catch with it is, make sure to measure AFTER grinding the oats into a powder and not before. I bake these according to the directions, but they stayed as ball forms even after being done baking. Well if you are a long time reader of CMA, you’d probably expect the first thing – oat flour. It came out alright but I think it’s a bit too dry. LOVE these – just made them today and they turned out incredible!! I just made these and they are delicious. While the dark chocolate makes these  cookies healthier, a different type of chocolate can be substituted. But i’m having a hard time finding baking soda and coconut oil is really expensive where I live. I wouldn’t recommend it on these cookies! Thanks! I replaced the brown sugar with coconut nectar and added a little extra oat flour. I substituted the brown Sugar for 10 tbls of Truvia (I know that sounds like a lot) when I did a batch with just 4 tbls of truvia it tasted like cardboard. Okay wow. I would add a little less cinnamon next time, cause i’m definitely making this again! My family and I are trying to go a little more natural and eat less processed foods. I’ve made these so many times and never tasted anything bitter so I did a little research… Is there a possibility your oats may be old/rancid? These were so delicious, soft and moist! I did leave the batter overnight in the fridge as I wanted to crown them as Breakfast Cookies, but prior to baking it needs to rest at room temperature for about 20-25 minutes for easier rolling.
